An ancient tradition
Along the coast of the Tyrrhenian Sea, thanks to coastal lagoons rich in fish as well as hot saltwater springs, the ancient Romans bred the fish they caught to ensure quantity and availability. The Maremma has kept this culture and tradition of fishing and breeding alive throughout the centuries and this led to the birth of the Orbetello aquaculture centre in the seventies: a centre entirely dedicated to top quality products with the flavour and characteristics of saltwater fish.

Pure and controlled water
Fry Growth
The term fry is used to mean juvenile fish, from the moment when they resemble adult fish, therefore just after the larval phase. The fry are purchased by specialized companies and carefully selected based on breeding criteria that is similar to ours.
The fry are placed in small tanks where it is easier for them to adapt to the new breeding conditions.
Once they have adapted they are moved to a breeding tank. The average growth duration is 18-24 months.
Fish diet, Fish food
When we eat a fish we assimilate the same substances that it was fed, so our fish are fed with the best fish food available on the market. Our fish food is made up of superior quality GMO-FREE soy and maize vegetable flour, fishmeal and fish oil from sustainable fishing. Every month we make sure that the product purchased complies with our high standards.
The diet that our fish follow is calculated and differentiated according to the various stages of growth. A monitoring system is activated to guarantee a high quality final product.
Pure Seawater
We use sea water drawn from artesian wells where it infiltrated through the rocksbelow more than 70years ago. This water is heated due to a reaction when it comes into contact with rocks and has a constant temperature of 22 degrees. This guarantees that it is pure and that it has not been contaminated by any chemical agent pertaining to the contemporary era. Water purity is a guarantee for human health. Each well is analysed every 4 months. The water in the tanks is changed and oxygenated continuously. This is followed by a constant monitoring and inspections aimed at maintaining a healthy, constant and ventilated environment so as not to cause the fish any type of stress.
Technique and tradition come together in fisching: fishermen enter the water with nets, following techniques similar to those that have always been used in seas all over the world.
Every morning the plant manager collects the orders and determines the quantity of fish to be fished from each plant based on species and size. Only what has been ordered is fished. Immediately after fishing, the fish is transported to the plant where it is selected, put into bags and labelled.
It is then placed in the refrigerating room and is immediately dispatched so as to be on the sales counters within 20 hours of fishing.

Our fish must grow in full compliance with the rules regarding animal welfare. Furthermore, our sea bass and sea bream must be good for the people who eat them.

Traceability
Knowing everything
The product is delivered to the customer with all the required traceability documents. These documents allow you to trace back from a single fish box to the plant, to the fish food used, to the water where the fry are grown.
